Oven-Roasted Sea Bass with Ginger and Lime Sauce
2 tablespoons fresh lime juice 1-1/2 tablespoons soy sauce 1 tablespoon chopped fresh cilantro 1 tablespoon minced shallot 5 teaspoons good olive oil
2 6 oz. sea bass fillets (about 3/4 inch thick)
Preheat oven to 450°F. Mix first 5 ingredients and 3 tsp. oil in small bowl. Season with salt and pepper.
Brush a glass baking dish with remaining 2 tsp. oil. Arrange fish in prepared dish; turn to coat. Sprinkle fish with salt and pepper; spoon about 1 to 2 tbl. of sauce over fillets.
Roast fish until just opaque in center, about 12 minutes. Top fish with remaining sauce and serve. No message selected

Tip: I don't like to buy a bunch of cilantro for just one tbl. so I used Gourmet Garden Cilantro spice blends which I get at Publix, in the fresh veggie section. Also used the Ginger spice blend. They worked perfectly and saved a lot of chopping, making this dish about as simple as you can get.
