This recipe served four. 1 pound Red potatoes halved 1 pound Asparagus 2 Salmon Fillets Olive Oil 2 T Garlic minced 2T Fresh Thyme ¼ Cup Fresh Lemon Juice 2 T Fresh Ginger grated 2 T Honey (or more) Salt & Pepper Preheat over to 400 degrees Mix the thyme, lemon juice, ginger, 1T garlic and honey to make a glaze set aside Add halved red potatoes (halved) to your pan Mix the potatoes with 1T olive oil, thyme, 1T garlic, salt and pepper Bake at 400 degrees for 25 minutes Remove potatoes from the oven push them to the top of your baking pan. Spread the asparagus on both sides of the pan Place the salmon in the middle of the pan Sprinkle a little olive oil over the asparagus, add some thyme, garlic, lemon juice, salt & pepper. Mix. Brush the tops and bottoms of the salmon with the glaze – salt and pepper to taste. Put back in the oven for about 10 – 15 minutes (depending on how well done you like your salmon) Enjoy!
