INGREDIENTS:
1 1/2 lbs. of halibut fillet, skin removed
sea salt
black pepper
1 to 2 tablespoons of flour
2 t0 3 tablespoons extra virgin olive oil
1/2 lemon
METHOD:
Season both sides of the halibut fillet with sea salt and fresh cracked black pepper, then lightly flour both sides. In a large non-stick skillet, heat 2 to 3 tablespoons of extra virgin olive oil to high but not smoking hot. Carefully place the halibut fillets into the hot skillet, making sure not to crowd the skillet. Let the halibut cook for 4 to 5 minutes to develop a nice brown crust, avoid moving around or stirring. Turn the halibut to the opposite side and cook for another 4 to 5 minutes. Remove to a platter and drizzle with the juice from half a lemon. Enjoy!
