12 oz. Barramundi Fillets (2-3 fillets) 1 Tbsp. Extra Virgin Olive Oil 1 Tsp. Lemon Juice 1 Dash Salt 1 Dash Pepper 1 Tbsp. Parsley (or any herb you like)

Makes 2 Servings.
1. Preheat grill to high. 2. Season fish fillets with salt and pepper, and coat with 1 Tbsp. of olive oil. 3. Drizzle lemon juice over the plate where you'll put the fish once it's off the grill. 4. Pick up a wad of paper towel with tongs, dip it into olive oil and use it to brush grill rack. 5. Place fish on grill and cover grill. Cook for 3 min. Turn grill down to medium. Flip fillets, cover grill, and cook an additional 3 min per inch of thickness. 6. To test for doneness, insert spatula under a thin edge of fillet and lift half of fillet perpendicular to grill. If the flakes separate, the fish is done. Lift fillet off grill and place it on the prepared plate to get it flavored with lemon juice. 7. Garnish with herbs and serve.
