Ingredients:
1 Lb Cobia (4 oz to 6 oz portions)
2 tsp Lola’s Spices Cajun Blend
1 TB Olive Oil
1 -14.5 oz Cannelini Beans *rinsed and drained
2 Cups Arugula rinsed
1/2 cup sliced Cherry Tomatoes
1/2 cup Red Onion *thinly sliced
1 pinch salt
1 Lemon (1 tsp zest and wedged)
Preheat
oven to 375F, on a sheet pan drizzle Olive Oil on both sides of Cobia
and sprinkle Lola’s Spices Cajun liberally. place in the oven for 8 to
10 minutes or until Cobia is fully cooked.
Serving Suggestion:
Cannelini Beans and Arugula
Over
medium heat, add 1 tsp Olive oil, Red onions, Tomatoes, and salt, saute
for 3 to 5 minutes or until soft. Add Cannelini beans, squeeze lemon,
and add zest to the mixture. When beans are warm 2 to 3 mins, toss in
Arugula and pour into serving bowl continue to toss until well mixed.
Serve with Cobia and fresh lemon wedges.
