Instructions

Preheat the oven to 400F.

Mix the parsley, dill, olive oil, garlic, salt and pepper and lemon in a small bowl.

Cut two long pieces of parchment that, when folded in half
can easily fit the size of your fish filet inside. Fold each piece in
half.

Unfold one piece of parchment and place your fish filet
about 1 inch to the right of the fold. Season with salt and pepper.
Using a spoon or basting brush, cover the fish in the prepared herb
mixture generously. Prepare the second fish filet on another piece of
parchment and use the remaining herb mixture to top both.

Fold the parchment paper loosely over the fish. Starting
at the bottom, make 1/2” folds over one another, tightly crimping around
the parchment until a half moon shape is formed. Be sure the final
crimp is tightly tucked under to seal off the fish.

Place on a baking dish and bake for 10-15 minutes,
depending on the thickness of your fish). The parchment will slightly
brown and puff up.

To serve, you can give each family member or guest their
own knife to put open their packets! From my experience as a personal
chef, kids love this meal and fun activity! Enjoy.
