Ingredients

For the Sauce:

3 Tbsp Fresh lemon juice, approx. one large lemon

2 Tbsp Butter
-
2 Tbsp Extra virgin olive oil

1 Tbsp Shallot, minced
-
4 Tbsp Capers, drained
-
½ tsp Kosher Salt
-
½ tsp Fresh Ground Pepper

For the Fish
-
1-2 large Lemons, sliced into rounds
-
4 Haddock filets, also delicious with Halibut or any other mild white fish
-
1 tsp Kosher Salt
-
2 tsp Garlic Seasoning, garlic, salt, pepper
Instructions
- Preheat
your grill or grill pan to medium heat. Pat the fish dry and spray with
non-stick cooking spray or olive oil. Season with the salt and garlic
seasoning.
- If you are using your grill,
coat it with a little bit of olive oil. Next, place about 2-3 slices of
lemon (for each filet) onto the grill grates. Now, place a fish filet
onto the lemons, close the grill, and cook for about 8 minutes or until
the fish is opaque and flaky.
- If you are
using a grill pan, you can do the same thing with the lemon slices, or
you can spray the pay with olive oil, then sear on medium/high heat,
each side of the filets for about 4 minutes then flip and do the same
until the fish is opaque and flaky.
- In the
meantime in a small saucepan, combine all of the ingredients for the
sauce. Simmer on low for about 5 minutes. Just long enough to soften
the shallots a bit.
- Remove fish from grill or grill pan and top with sauce.
- Serve with Hericots Vert and Rice or Couscous!
